A great way to consume leftover cooked beetroots is to form them into tikkis, creative and unique other than just utilizing them in a salad. Beetroot tikkis or cutlets are a popular street food in Calcutta. They can be eaten as a snack, appetizer, sandwiched between a bun or served with the main meal.
To make these tikkis, beetroots are parboiled on the stovetop or roasted in the oven. I usually add a little water in the baking pan (picture below) when roasting them in the oven. They are grated and combined with riced potatoes along with spices. Delicately shaped into tikkis, dipped in breadcrumbs and shallow fried. These tikkis are delicious, moist and healthy.
Beetroot is rich in iron, vitamins and minerals. Potassium in beet makes them heart healthy, regulating blood pressure. High in fibre content, it prevents constipation and promotes a healthy digestive tract. It is fat free and low in calories. The presence of nitrates in beet help fight the progression of dementia. Though they are high in sugar content and have a moderately high glycemic index, the sugar is gradually released into the blood stream with a low glycemic load. (Makes 12)
Ingredients:
2 parboiled beetroots (grated)
2 potatoes (boiled)
2 green chillies (minced)
2 cloves of garlic (minced)
1 teaspoon ginger (grated)
1 teaspoon cumin powder
1 teaspoon coriander powder
few coriander leaves (finely chopped)
juice of 1/2 a lemon
1 cup breadcrumbs
oil for shallow frying
salt
Method:
Pass boil potatoes through a ricer.
Gently combine grated beetroots with riced potatoes and rest of the ingredients (except oil and breadcrumbs). Form into 12 tikkis.
Heat a skillet with oil for shallow frying.
Coat tikkis with breadcrumbs and fry till crisp on both sides. Drain on absorbent paper towels and serve.

Note:
- Gently mixing the ingredients prevents beetroots from releasing moisture.
- Tikkis are quite moist and once shaped can be directly coated with breadcrumbs. No need of dipping tikkis in beaten egg, cornflour or plain white flour paste before coating them with breadcrumbs.
- Parboil the beetroots (around 8) in an oven at 400 F or 200 C in a baking dish with some water for 20 minutes. Cool, refrigerate and use beetroots for salads, tikkis or other dishes.
- If desired, add a chopped onion and other spices. Onion was omitted in the recipe to avoid excess moisture.
