A traditional Christmas sweet unheard by many and slowly disappearing from the Goan cuisine. The Portuguese word “girgelim” translates to “sesame”, which is the main ingredient for this sweet confection. It is very easy to make girgilada at home. Sugar is combined with ginger juice, honey and toasted sesame seeds to obtain a pale golden coloured brittle that is rolled into a thin single layer. Ginger is normally not used, but it makes a world of difference in flavour. When still warm, cut into diamonds and then, stored in an airtight container. This toffee is elegant, delicious with a hint of ginger, and crunchy. Healthy, dairy-free, gluten-free and a natural source of energy, so a little goes a long way. Girgilada (Sesame Seed Toffee)
(Yields 45 pieces)
Ingredients:
1/2 cup sesame seeds
1/4 cup white granulated sugar
1 tablespoon ginger juice
1/4 cup honey
oil for spraying work surface, rolling pin and metal ruler
Method:
Clean the sesame seeds, remove any dirt or stones. In a pan, on low heat, lightly toast the seeds stirring continuously for almost 6-8 minutes. When they are golden brown and give off their aroma, remove the pan from the heat and transfer the seeds onto a plate.
Lightly grease a work surface, rolling pin and metal ruler. Set aside.
In a saucepan, melt sugar with ginger juice and honey without stirring. On low heat, keep swirling the pan and make a syrup of one thread consistency. Incorporate the sesame seeds, combine well and transfer the mixture onto the prepared work surface.
With the greased rolling pin, thinly roll the toffee. While it is still warm, cut into diamonds.
Once cool, store the sesame seed toffee in an airtight container.
