In Portuguese, merenda means "snack". Mandos is a popular traditional tea-time snack prepared with Goa parboiled rice, coconut, palm jaggery and salt. Enhanced with the addition of fruits either bananas, cashews or jackfruit pods (the latter two when in season). Enriched with chopped cashewnuts that lend a delightful bite. Flavoured with fresh turmeric leaf from our garden, cardamom powder and grated nutmeg. The batter can be steamed or baked. Dense in texture, this cake is perfect for breakfast or evening tea. Nutritious, wholesome, comforting, delicious and satisfying.
Bananas are packed with essential nutrients like potassium, dietary fibre and B vitamins. The high potassium content in bananas helps to lower blood pressure, protects against heart attack and stroke. High fibre in bananas help normalize bowel motility. They are a natural antacid providing relief from acid reflux and heartburn. Moderate consumption of bananas can protect against cancer of the kidney, diabetes, osteoporosis and blindness.

Goan Banana Mandos (Merenda)
(Serves 10)
Ingredients:
1 and 1/2 cups Jaya or Jyoti Goa parboiled rice
3 large ripe bananas (500 grams)
1 cup fresh grated coconut
1/2 cup palm jaggery (grated)
1/2 cup cashewnuts (chopped)
1/4 teaspoon cardamom powder
1/8 teaspoon nutmeg (grated)
oil for greasing
a pinch of salt
Method:
Wash and soak rice for 4 hours.
Drain out water from the rice. Grind rice with bananas, coconut, jaggery and salt with one and a half cups of water to a slight coarse consistency.
Note:
Pour batter into a bowl, add cashewnuts, cardamom powder and nutmeg. Incorporate a turmeric leaf after tearing it into two or three pieces.
Heat the steamer with water and lightly grease a cake pan or deep container.
Pour batter into the prepared pan and cover with a lid or aluminum foil. Steam until a knife inserted in the centre comes out clean, about 1 hour. Depending on the size of the pan, if wider, it will take less time to be done.
Carefully remove the pan from the steamer and place in
a dish with little water to cool.
Run a knife along the edge of the pan. The cake will come off easily. Transfer onto a cutting board.
Cut into pieces and serve warm or at room temperature.

Note:
- One cup measure is 250 ml.
- An 8-inch cake pan was used.
- Depending on the sweetness of the bananas, increase or decrease the amount of jaggery.
- To bake, preheat oven to 350 F or 180 C. Grease and line a cake pan with parchment paper. Pour batter into the cake pan and bake till a toothpick inserted in the centre comes out clean.
- Bananas can be substituted with cashews or jackfruit pods.
