A wholesome delicacy prepared using fresh cucumber and roasted on fragrant banana leaves highlighting the simplicity of authentic Goan home cooking. This rustic bhakri is flavourful, completely oil-free and sugar-free, with no added water. The batter is made with rava (semolina) and freshly grated cucumber, relying entirely on the vegetable’s natural moisture for binding. Enhanced with other ingredients and salt that lend a comforting, satisfying taste. Traditionally, the thick batter is gently spread by hand over a banana leaf and covered with a second leaf. As it roasts, the banana leaves imparts a subtle smoky fragrance that makes the bhakri even more delicious. Goan Rava Taushe Bhakri on Banana Leaves
(Yields 3)
Ingredients:
2 cups grated cucumber
1 cup rava (semolina)
1 medium onion (chopped)
2 green chillies (finely chopped)
1/2 teaspoon grated ginger
1 teaspoon cumin seeds
handful coriander leaves (chopped)
salt
(You will need banana leaves for roasting)
1 cup measure used is 250 ml
Method:
In a bowl, combine all the ingredients well and set aside for 10 to 15 minutes to allow the rava to soak and bloom.
Simultaneously, prep the banana leaves by cutting them into square pieces. Rinse, wipe and soften them over the flame. Set aside.
Heat a tawa on medium fire and place a square piece of banana leaf. Spread the batter on top of the leaf and cover with a second leaf. Cook for 5 to 8 minutes until the bottom leaf is well charred and flavour of the leaf permeates the bhakri. Turn and char the other side. The leaf will detach from the batter once the bhakri is cooked. A well roasted bhakri will have brown spots.
Serve hot with chutney.

- Sweet Rava Cucumber Bhakri can be prepared with grated cucumber and coconut along with jaggery and salt. Allow the rava to soak and bloom for 10 to 15 minutes.
