Quick & Easy Goan Mushroom Stir-Fry
(Serves 4)
Ingredients:
350 grams cremini or button mushrooms (washed and quartered)
1 onion (sliced)
2 green chillies (slit)
1 teaspoon chopped garlic
1/2 teaspoon grated ginger
1/4 teaspoon turmeric powder
1/2 teaspoon Goan garam masala
2 tablespoons thick tamarind pulp
1 and 1/2 tablespoons grated coconut
few fresh coriander leaves (chopped)
2 tablespoons oil
salt
Method:
Heat oil and sauté onions until translucent. Stir in garlic, ginger and green chillies, cook till fragrant. Sprinkle turmeric powder and Goan garam masala, fry well.
Incorporate the mushrooms and cook on high heat. Add the tamarind pulp and salt. Cook until mushrooms are done and mixture dry, in few minutes.
Garnish with grated coconut and remove from heat after a couple of minutes.
Serve hot with a drizzle of chopped coriander leaves.
