Bread and Butter Pudding
(Serves 8)
Ingredients:
12 slices of day old bread
1/2 cup sugar
1 cup milk
1 cup half and half cream
4 eggs (extra large)
1 teaspoon vanilla extract
1/4 teaspoon nutmeg (grated)
1/4 cup butter (at room temperature)
1/2 cup raisins and cashewnuts
Method:
Grease a 9.5" x 7.5" x 3" baking dish with butter.
Butter bread slices only on one side. In the baking dish, place the buttered side facing upward (four slices in each row). Sprinkle raisins and cashewnuts between each bread layer. You will have three layers of bread slices.
Preheat oven at 400 F or 200 C.
Beat eggs with sugar. Then add milk, cream, vanilla and nutmeg. Mix all the ingredients together and pour egg mixture over the bread slices. Press the top layer of the bread gently to soak in the liquid. Keep aside for few minutes.
Bake pudding in the oven till well risen, top golden brown and liquid completely absorbed, around 30 mins.
Note:
It's important to grease the baking dish well to prevent pudding from sticking on all sides.
