With hectic schedules and full-time jobs, we do not have to resort to processed food. Here is a quick and easy curry with Karma's xacuti powder. Karma’s have simplified the process with their unique range of powders, curry pastes and pickles. At times, I do take a break from tedious cooking and use shortcuts to prepare curries with spice powders, coconut powder or coconut milk. It’s fast, easy and flavourful when prepared with the right products.

Chicken Curry In A Hurry
(Serves 8)
1 whole chicken (de-skinned and cut into pieces)
1 large onion (chopped, around 2 cups)
1 large tomato (chopped)
2 green chillies (slit)
4 large cloves of garlic (minced)
1” piece of ginger (grated)
1/2 teaspoon turmeric powder
3 tablespoons of Karma’s xacuti powder (Karma’s links indicated in note below)
2 cups of fresh coconut milk or 1 can (400 ml)
1 cup light tamarind water (not too strong)
1 tablespoon vinegar
4 potatoes (chopped into big pieces)
1 sprig of curry leaves
2 tablespoons oil
few coriander leaves (chopped)
salt
Method:
Wash chicken pieces and season with salt.
Heat oil in a pan, add curry leaves, onion along with garlic and ginger. When onion is lightly brown, add tomato and fry till pulpy. Then add turmeric powder along with xacuti powder. Saute nicely and add the chicken. Coat the chicken with the spices and then add tamarind water along with coconut milk.
Cover pan with lid slightly ajar and on medium heat, let chicken cook till half done. Now add potatoes, vinegar and salt. Curry is ready when chicken is cooked and potatoes are done. Serve garnished with coriander leaves.

Note:
- Add half a bouillon cube and a pinch of sugar to enhance and balance flavour.
- This curry is so delicious. The family enjoyed it too. I just can't wait to make it again. Best part is that it is quick and easy.
- Coconut milk can be substituted with 3 heaped tablespoons of coconut milk powder included with the xacuti powder.
