These crispy cutlets are then layered with marinara sauce, cheese and baked. The chicken is moist, flavorful and delicious. A great family dish, loved by all and definitely, a children’s favourite as it is usually served over a bed of spaghetti or pasta.

Chicken Parmesan
(Serves 4)
Ingredients:
2 boneless chicken breasts
1 cup breadcrumbs
3/4 cup grated parmesan cheese
1/4 teaspoon pepper powder
4 slices of part-skim mozzarella cheese
Olive oil for shallow frying

Method:
Place breast one at a time between two plastic wraps and pound with a meat mallet to flatten them. Alternatively, you could halve (butterfly) each breast horizontally into two. Season breasts with salt and pepper powder.
In a dish, mix breadcrumbs with only 1/2 cup of grated parmesan cheese. The balance 1/4 cup of cheese is required for later, when baking.
On medium high flame, heat a skillet with some olive oil. Take each chicken breast, dip in breadcrumbs mixture and shallow fry till golden brown and crisp. If you prefer, you can dip each breast in beaten egg, then breadcrumbs mixture and fry. Fry the chicken only once on each side. Do not fry for too long as it will continue to cook in the oven.
Heat oven at 400 F or 200 C.
In a baking dish, first add some marinara sauce at the bottom. Then, place fried chicken breast and spread marinara sauce on top. Sprinkle the balance 1/4 cup of grated parmesan cheese and then top with slices of mozzarella cheese. Place baking dish in the oven and bake until cheese has melted and sauce bubbly.

Ingredients:
1 onion (chopped)
4 large cloves garlic (minced)
1/2 teaspoon red chilli flakes
1/4 teaspoon pepper powder
1 (28 ounce) can of crushed tomatoes
2 tablespoons olive oil
1 sprig of fresh basil leaves
a pinch of sugar
salt
Method:
Heat a pan with olive oil, add onion, garlic and chilli flakes. When onion soft, add crushed tomatoes along with rest of the ingredients. Simmer till all the water evaporates and sauce is thick.
