A simple Goan okra dish with no spices and cooks in 10 minutes. Many are afraid and avoid cooking okra because of its slimy texture. To have a slime-free okra dish, here are tips from my late mother. Wash okra first, wipe them dry and then cut into pieces. Addition of tamarind water, vinegar or kokum when cooking prevents okra from being slimy. The acidity in these ingredients cut down the sliminess. Avoid overcooking the vegetable as it loses nutrients, flavour and texture.

Goan Style Okra (Quiabos Estilo Goês)
(Serves 6)
1/2 kg lady fingers
1 onion (chopped)
2 green chillies (slit)
1 tomato (chopped)
1/2 cup light tamarind water
1/3 cup grated coconut
2 tablespoons of oil
salt
Method:
Wash lady fingers and wipe them with absorbent paper towels. Trim the ends off and then cut each into 1/4” rounds.
On medium flame, heat oil in a pan and saute onion with green chillies till onion is translucent. Add tomato, fry till soft and pulpy followed by lady fingers, tamarind water and salt. Cook on low heat till lady fingers are tender. Sprinkle grated coconut, stir and serve.
Alternatively, all the ingredients (except coconut) can be added together and cooked. When okra is tender, at the end add grated coconut.
