I was wondering what's the hype about tomato salad bhaji and wanted to taste it. Last December (2018) when we were in Goa, I requested John to get some for us from the local restaurant. A popular watery onion-tomato based dish usually eaten for breakfast with pão (bread). After discussing with my brother's wife who resides in Goa, she then gave me her Hindu maid's recipe. Very easy preparation, ready in minutes and incredibly delicious especially with fresh tomatoes from our garden. Waited patiently all summer long to harvest and make this dish.
Select tomatoes that are ripe, firm, fresh and without any bruises. The combination of humble ingredients like sliced onions and tomatoes with minimal spices is what makes this dish pleasing and enjoyable. Goan Tomato Salad Bhaji/Salaad Bhaji/Saladh Bhaji
(Serves 4)
Ingredients:
2 large onions (sliced, around 4 cups)
4 large tomatoes, about 800 grams (sliced)
4 small spicy green chillies (slit)
4 large cloves of garlic (finely chopped)
1/4 teaspoon grated ginger
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon turmeric powder
1 sprig of curry leaves
few coriander leaves (chopped)
a tiny pinch of sugar
1 cup water
2 tablespoons oil
salt
Method:
Heat oil in a pan, add mustard seeds, cumin seeds and curry leaves. Cook until seeds start to splutter and curry leaves are crisp.
Stir in the onions, garlic and ginger. Fry until onions are slightly golden. Then, incorporate the green chillies, tomatoes and turmeric powder. Once tomatoes are broken down and pulpy, add the water, sugar and salt. Simmer and cook until well combined.
Garnish with coriander leaves.
Serve tomato salad bhaji with pão.

- Depending on the amount of liquid released by the tomatoes, you may adjust the consistency of the dish by adding more or less water.
