Pork is so versatile and can be cooked in so many ways. Pepper pork is one of our family's favourite dish. It's mouthwatering with a kick of pepper and all you need is a fork to enjoy this dish. It can be served as a starter with a glass of cold beer or side dish with the main meal.
The meat is marinated with spices and vinegar for a couple of hours, cooked till tender with all the juices completely absorbed. In a separate skillet, sliced onions are sauteed till tender-crisp with green chillies and then combined with the cooked pork. Finished with coarsely ground pepper and a dash of vinegar. A dish oozing with flavour, making you salivate for more.
Beef can be substituted for pork. When buying pork, the meat should be pale pink, firm with white fat not yellow. The bones should be red and not white. When cooking, trim excess fat for a low-fat healthy meal. Pork can be roasted, grilled, stewed, pan-fried, stir-fried and baked. It is high in protein, excellent source of iron and other nutrients. 4 large onions (sliced)
4 green chillies (slit)
1 teaspoon coarsely ground peppercorns
1 tablespoon vinegar
2 tablespoons oil
Marination
1 1/2 kg pork (cut into strips)
1 teaspoon chilli powder
1/2 teaspoon turmeric powder
1 teaspoon cinnamon powder
1/2 teaspoon clove powder
1 tablespoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon pepper powder
6 large cloves of garlic (finely chopped)
1" ginger (finely grated)
1/4 cup vinegar
salt
Method:
Marinate pork with spice powders (under marination), garlic, ginger and salt for an hour or two.
On medium heat, cook pork in a pan with 1/2 cup water till tender and juices completely absorbed. Set aside.
Heat oil in a skillet and fry onions with green chillies. Cover skillet for onions to soften slightly but still crisp. Stir in cooked pork and sprinkle coarsely ground pepper. Check for seasoning and finally add 1 tablespoon vinegar.
Serve pepper pork as a starter or side dish with main meal.
