I first tasted bhakri prepared by my mother-in-law. The bhakri is usually eaten for breakfast. Rice is soaked overnight and next morning, ground on the grinding stone with very little water, resulting in a thick batter. The batter is spread thick by hand onto the banana leaf. Grinding the rice in the blender results in a slightly runny batter and have to use a ladle to spread it onto the leaf. The roasted bhakri has a crisp exterior with a soft interior. Taste of coconut in between definitely makes it a delectable morning treat.

Rice Bhakri on Banana Leaf
(Makes 6)
Ingredients:
3 cups red parboiled rice
1 cup fresh or frozen grated coconut
salt
Method:
Soak rice overnight, next morning grind rice to a paste with little water. Add coconut to the batter along with salt.
Heat a tawa or griddle on medium heat and place a square piece of banana leaf. Spread a spoonful of batter on the leaf and cover with another square piece of banana leaf. Cook for 5 minutes until the bottom leaf is well charred and flavour of the leaf permeates the bhakri. Turn and char the other side. The leaf will detach from the batter once the bhakri is cooked. A well roasted bhakri will have brown spots.

300 grams jackfruit pods (weight without seeds)
3/4 cup fresh grated coconut
3/4 cup water
salt
Method:
Grind rice fine with water and salt. When the batter is almost ready, grind the jackfruit pods but leave them coarse (for a bite).
Transfer batter into a bowl and mix in the coconut.
Follow procedure for roasting as indicated for plain rice bhakri above.
