This apple cake is to celebrate my oldest niece Tatyana's birthday. A scientist with a PhD in Biological and Biomedical Sciences from the University of Edinburgh, U.K. She worked as a Researcher at the University of Cambridge in London. An inspiration to all and always striving to make a difference in the field of autism. The perfect cake for a birthday in the Fall is an apple cake.
We were blessed this year with a bountiful harvest of apples. Below is a picture of the apple tree in our backyard. A mixture of apples from our five apple combo tree were used in the cake. They were coarsely chopped in the food processor, the batter was flavoured with lime juice, cinnamon powder and vanilla extract. The cake was moist, perfectly sweet and spiced with cinnamon. Absolutely delicious and sinful.
When selecting apples, choose ones that are firm without bruises, shiny and not dull. To protect chopped apples from being oxidized, cover them in a solution of one part lemon juice to two parts of water. Apples promote good health, rich in fiber and helps in weight loss. Low in calories, has no fat or cholesterol. Controls blood sugar levels, facilitates digestion, improves eyesight and useful in treating anemia. They are often called a "miracle food" and "nutritional powerhouse". So eat an apple a day to keep the doctor away.

Apple Cake
(Serves 10)
Ingredients:
3/4 cup margarine
1 cup sugar
3 eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon lemon juice (for cake batter)
2 cups flour
1/2 cup milk
1 teaspoon cinnamon powder
4 cups chopped apples
juice of 1/2 a lemon (to prevent apples from browning)
Method:
Peel, core and slice apples. To prevent the apples from browning, add juice of 1/2 a lemon. Pulse slices to coarse big pieces in a food processor.
Grease and lightly flour a 10" round tube pan.
Preheat oven to 350 F or 180 C.
Sift the dry ingredients; flour and baking powder in a bowl. Keep aside.
Using a stand mixer or with an electric beater, first beat the margarine and then add sugar. When sugar is well incorporated, add eggs one at a time. Mix in the dry ingredients alternating with the milk. Finally add vanilla extract, cinnamon powder and lemon juice. Fold in the chopped apples. Pour mixture into the prepared pan.
Bake in the oven till a cake tester or toothpick inserted in the centre comes out clean, around 1 hour. Cool the cake in the pan and then invert onto a circular platter. Dust with icing sugar.

Note:
- Margarine can be substituted for butter.
- No salt is required if using butter or margarine that is already salted.
- The cake took exactly an hour to bake but with the apples it was moist. Do not over bake. A truly delicious yum cake.
