Super easy to prepare with the egg mixture baked in a muffin tin. The bites were adapted and enhanced with extra fresh ingredients. Make them ahead, refrigerate, reheat and have breakfast or snack on the go. Enjoy them for lunch or dinner. Alternatively, serve them as an appetizer at your next party. A sure delightful bite, high in protein with the goodness of egg, bacon and cheese.

Bacon & Cheese Omelette Bites
(Yields 12)
Ingredients:
1 pack of bacon strips (500 grams)
6 eggs
1/4 cup milk
1 onion (chopped)
2 green chillies (chopped)
1 tomato (chopped)
1 cup shredded cheese
1 green onion (chopped)
salt and pepper powder
Method:
Cut strips of bacon into half inch pieces. Place in a deep pan, cook until crisp.
Note:
Grease a muffin tin even if it is a non-stick one liberally with oil. You could use liners instead, but the mixture will stick anyway.
Beat eggs with milk, pepper powder and salt.
Preheat oven to 350 F or 180 C.
In a separate bowl, mix together onion, green chillies and tomato. Transfer a spoonful into each cup of the muffin tin. Top with pieces of cheese, bacon and green onion. Pour beaten eggs in the centre of each cup until the top. Place muffin tin in a baking sheet to catch any spills.
Bake for 20 minutes until egg bites are cooked through, fluffy and golden.
Cool bites for 5 to 10 minutes. Then, remove them from the muffin tin and serve warm with any leftover bacon.
