A popular bar food and appetizer in North America after the recipe originated in Buffalo, New York. When I first heard of buffalo wings, I thought the recipe would be difficult. It is super easy with the wings deep fried and smothered in hot sauce. They are served with blue cheese dip, celery and carrot sticks.
I have baked the wings after marinating them for a couple of hours with spices and Frank's Red Hot sauce. Once cooked, they were tossed in some more sauce that was mixed with melted butter. Baked Buffalo Wings
(Serves 6)
Ingredients:
24 chicken wings
2 teaspoons chilli powder
1 1/2 teaspoons paprika powder
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
1 tablespoon apple cider vinegar
1/2 cup Frank's Red Hot Sauce
2 tablespoons butter (melted)
salt
Method:
Wash, pat dry chicken wings with paper towels. Season with salt, spice powders, vinegar and quarter cup of hot sauce for two hours in the refrigerator.
Preheat oven to 400 F or 200 C.
Line a baking tray with silver foil and lightly grease with oil. Place chicken wings and bake for 30 minutes.
Turn them halfway through the baking process with a pair of tongs.
Stir melted butter with the remaining quarter cup of hot sauce. Pour over cooked wings and toss to coat completely. Serve with blue cheese dip.
Blue Cheese Dip
Ingredients:
1/2 cup yogurt or sour cream
2 tablespoons mayonnaise
1/4 cup blue cheese
Method:
Blend the above ingredients till smooth and serve with chicken wings.
Baked Buffalo Chicken Drumsticks
Remove skin off from the drumsticks, cut gashes, wash and pat dry. Marinate for a couple of hours or overnight with the above spices, a dash of Frank's Red Hot Sauce and some extra virgin olive oil. Follow indicated method and bake for 35 to 40 minutes until drumsticks are cooked through. Then, toss in sauce and serve hot.
