Baked Chinese-Style Chicken Meatballs
(Yields 50)
You will need two 13" x 18" baking sheet pans
Ingredients:
1 kg boneless chicken thighs or mince
2 tablespoons soy sauce
1 tablespoon Lee Kum Kee chili garlic sauce
2 green onions (finely chopped)
3 large cloves of garlic (grated)
1/2" ginger (grated)
4 green chillies (finely chopped)
1/4 cup coriander leaves (finely chopped)
2 tablespoons cornstarch
1 egg
1/2 teaspoon pepper powder
No salt (replaced with sodium in the sauces)
Method:
Wash chicken thighs, drain well and grind with a bit of fat on them in a food processor. Transfer to a bowl and mix with rest of the ingredients.
Preheat oven to 400 F or 200 C.
Line the two baking trays with aluminum foil and lightly grease with oil.
Shape chicken mixture into bite-sized balls. Bake till meatballs are cooked through, around 15 minutes.
Coat balls with honey soy sauce or serve dip at the side.
Honey Soy Sauce
Ingredients:
2 tablespoons soy sauce
3 tablespoons honey
1 tablespoon rice vinegar
2 tablespoons warm water
1 teaspoon sesame oil
Method:
In a bowl, combine all the ingredients together. Stir well and serve dip with meatballs.
