Growing up, I remember my mother fried eggplants with beaten egg or with a coating of spicy chickpea flour batter. This is a simple and healthier version where the eggplants are baked. Ready in minutes, they have a creamy interior and melt-in-your-mouth.
Use firm eggplants and cut them lengthwise or crosswise. Coat them with olive oil, season with chilli powder, pepper powder and salt. Bake at 400 F or 200 C for 25 to 30 minutes until eggplant slices are cooked through. I love baked eggplants and enjoy the soft texture. Feel free to use your own spice mix or some grated cheese on the eggplant slices. I like to keep it simple with less spice.

Baked Eggplants
(Serves 6)
Ingredients:
1/2 kg eggplants (2 firm medium-sized)
1 teaspoon chilli powder
freshly cracked ground pepper (from peppermill)
2 tablespoons extra-virgin olive oil
salt
Method:
Line two baking trays with aluminum foil and lightly grease with oil.
Preheat oven to 400 F or 200 C.
Wash eggplants and slice them uniformly into 1/4" rounds.
Season with salt, sprinkle chilli powder and freshly cracked ground pepper.
Brush each slice on both sides with olive oil and place on prepared trays.
Bake in the oven for 15 minutes, then turn or brush with more oil if needed. Continue to bake for an additional 10 to 15 minutes. Total bake time around 25 to 30 minutes.
