A chicken wing has three parts; wing tip, winglette and wing drumette. At the supermarkets, neat and convenient packs of chicken wings are readily available. Moreover, they are economical and easy to prepare at home. A favourite finger food, chicken wings can be baked or deep-fried and then tossed in any sauce of choice. Instead of deep frying, I have baked the wings with a secret ingredient that makes them crispy and crunchy. Dressed with a blend of honey garlic sauce, the sweetness balanced with chilli sauce, a delicious finger-licking variation.
Seasoned with spices, the chicken wings are coated with a combination of all-purpose flour and baking powder. The latter is the secret ingredient reacting with the skin, drying out the moisture when baked and leaving them crispy with a tender interior. Quick with no hassle of deep frying or any greasy mess. Baked Honey Garlic Chicken Wings
(Serves 6)
Ingredients:
24 to 28 chicken wings
1 teaspoon chilli powder
1 teaspoon garlic powder
1/4 teaspoon pepper powder
1 teaspoon baking powder
1/4 cup all-purpose flour
oil for spraying
1/2 teaspoon salt
Method:
Mix all-purpose flour, baking powder and spice powders.
Wash, pat dry chicken wings with paper towels. Season with salt and toss wings to coat well in the flour mixture.
Preheat oven to 400 F or 200 C.
Line a baking tray with aluminum foil and place a wire rack over it. Arrange the chicken wings on the rack and spray some oil on them.
Bake for 30 to 35 minutes until crisp and golden brown.
Honey Garlic Sauce
Ingredients:
1/4 cup honey
1/4 cup chilli garlic sauce
4 cloves of garlic (finely grated or chopped)
2 tablespoons oil
Method:
In a saucepan, heat oil and cook the garlic until fragrant. Mix in honey and chilli garlic sauce (picture below) to combine well. Remove from heat.
Stir in the baked wings and cover them with sauce.
Sprinkle with some toasted sesame seeds and serve.
