When you have meat lovers in the family, I have to come up with unique and exciting ways of cooking various cuts of meat. Pork chops are obtained either from the front rib cage or back section of the pig. Bone-in chops are preferable as the bone retains the moisture with the meat being juicier and flavourful. Chops can be baked, grilled or fried. Baking or grilling are definitely healthy cooking methods. Whatever method you choose, the safe internal temperature for cooked pork chops should be 145 degree Fahrenheit.

Then, broiled on either sides for 5 minutes each until done, resulting in scrumptious pork chops, which were hard to resist.

(Serves 4)
Ingredients:
5 bone-in pork chops (about 2 pounds or 1 kg)
1 1/2 tablespoons vinegar
salt
Grind to a paste (with very little water)
5 large cloves of garlic
1-inch piece of ginger
6 green chillies
10 whole black peppercorns
6 cloves
1 cinnamon stick (1.5-inch)
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
Method:
Wash and pat dry pork chops with absorbent paper towels. Season with salt and vinegar.
Marinate pork chops with the ground paste for a couple of hours or overnight. Cover and refrigerate while marinating.
Preheat oven to 400 F or 200 C.
Line a baking sheet with aluminum foil. Place pork chops and bake for 10 minutes.
Adjust the oven rack to the topmost position and set the oven to broiler mode at 500 F or 260 C.
Keep the baking tray under the broiler for 5 minutes. Remove tray from the oven, turn the chops and broil for an additional 5 minutes till the chops are cooked through and slightly charred.
Serve pork chops as a starter or with the main meal.
