These stuffed shrimps were prepared on Valentine's Day when I wanted to spend less time in the kitchen, but create a dish that is elegant and delicious. The shrimps were butterflied, seasoned with minimal spices with a mound of cheese. Topped with breadcrumbs, a drizzle of extra-virgin olive oil and baked. Ready in just 5 minutes, super-quick and easy dish. Prepping the prawns take some time, which can be done ahead and refrigerated. Stuffed and baked just before serving. An impressive appetizer or entrée, absolutely succulent with the cheese complementing the prawns beautifully.

Baked Stuffed Shrimps
(Serves 4)
Ingredients:
20 large shrimps
1 cup shredded cheese (use choice of cheese, as desired)
a dash of chilli powder
a dash of pepper powder
1 tablespoon seasoned breadcrumbs
2 tablespoons extra-virgin olive oil
salt
Method:
Shell prawns leaving the last segment along with the tail. Run a knife along the back of the shrimp and remove the digestive tract. Make the cut a bit deeper to open the shrimp into two connected halves like a butterfly. Wash and pat dry well with paper towels.
Season shrimps with salt, chilli and pepper powders. Set aside.
Preheat oven to 350 F or 180 C.
Stuff shrimps with cheese, transfer to a baking sheet. Top each with breadcrumbs and drizzle with extra-virgin olive oil.
Bake for 5 minutes or until shrimps are cooked through.
Serve hot.
