Transform a day old bread along with some bananas into this warm, comforting pudding. Prepared and baked in an hour, it is simple, easy, affordable, delectable and a winner. Serve this humble dessert topped with whipped cream, drizzled with caramel or chocolate sauce to give it an elegant look.

Banana Bread Pudding
(Serves 8)
Ingredients:
12 slices of day old bread
1/2 cup sugar
2 1/2 cups cream
4 large eggs
1 teaspoon vanilla extract
1/4 teaspoon nutmeg (grated)
2 tablespoons butter (at room temperature)
1/3 cup raisins
1/3 cup cashewnuts
2 ripe bananas
Method:
Grease a baking or cake pan with butter.
Grind the bread slices into fine crumbs in a food processor.
Preheat oven to 350 F or 180 C.
Beat eggs with sugar. Then add cream, vanilla and nutmeg. Mix all the ingredients together and pour egg mixture over the bread crumbs. Stir gently until well combined. Keep aside for few minutes.
Mash the bananas with a fork and stir in the above mixture along with raisins and cashewnuts. Transfer into the prepared dish and bake till the pudding is set. It will rise with a golden brown top and liquid completely absorbed, around 45 minutes to 1 hour.
When cool, serve with whipped cream, drizzled with caramel or chocolate sauce.
Note:
Whipped Cream
Ingredients:
1 cup heavy cream (cold)
2 tablespoons vanilla sugar
Method:
Chill the bowl and whisk or beaters in the freezer for 15 minutes.
Whisk cream with the sugar in the chilled bowl till stiff peaks are formed. Fill in a pastry bag and pipe over cold pudding. (If pudding is warm, the cream will start to melt.)

Note:
- Cream can be replaced with full-fat or skim milk.
- Rum can be added for extra flavouring.
- Instead of raisins and cashewnuts, replace with fruits and nuts of your choice.
- Bread slices can be replaced with your favourite loaf.

Ingredients:

2 tablespoons vanilla sugar
Method:
Chill the bowl and whisk or beaters in the freezer for 15 minutes.

Note:
- Unused whipped cream can be refrigerated in an airtight container for 24 hours.
- Replace vanilla sugar with 2 tablespoons confectioner's sugar and 1/2 teaspoon vanilla extract.
- Hershey’s chocolate sauce can be used.
