Most of us have tasted carrot or dudhi halwa. For a change, I decided to make beetroot halwa. It was definitely a unique sweet dish with the sweetness of the beetroots and addition of condensed milk. A quick and easy dessert to prepare.
Beetroots are highly nutritious and offer protection against coronary artery disease and stroke, lower cholesterol levels and have anti-aging effects. They are also known to lower your blood pressure, fight cancer and inflammation.

Beetroot Halwa
(Serves 6)
Ingredients:
4 cups grated beetroots
100 ml condensed milk
1/4 cup grated mawa or khoya
1/4 tsp cardamom powder
1/4 cup cashewnuts
1 tbsp ghee
a pinch of salt
Method:
In a saucepan, add grated beetroot with condensed milk and heat on a low flame. The beetroot will start to release moisture. Stir continuously till beetroot cooked, tender and liquid almost absorbed. At this stage, add rest of the ingredients and continue stirring till mixture leaves the sides and thickens. It takes around 20 to 25 minutes from start to finish.

Note:
- Mawa or khoya is optional. Addition of khoya adds richness to the halwa.
- Five medium size beetroots were used. Wash, peel and grate.
- Substitute carrots for beetroots to prepare carrot halwa.
