These croquettes are prepared with our garden sicilian zucchini that is similar in texture and taste to the bottle gourd. We have been growing sicilian zucchinis for more than 10 years and fascinated how long they grow in length. The longest that grew this summer was 50" (picture below). A bland tasting vegetable, healthy and nutritious that can be cooked into a sweet or savoury dish.

Bottle Gourd Croquettes
(Yields 16)
Ingredients:
2 large potatoes
2 cups grated bottle gourd
1/4 teaspoon turmeric powder
1/2 teaspoon pepper powder
2 long green chillies (finely chopped)
2 large cloves of garlic (finely chopped)
1/2” piece of ginger (grated)
2 teaspoons lemon juice
2 green onions (finely chopped)
handful coriander leaves (finely chopped)
1/4 cup + 1/2 cup breadcrumbs (for mixture + coating)
oil for shallow frying
salt
Method:
Boil potatoes with water and salt till tender. Drain off the water, peel and then pass through a ricer into a bowl. Set aside.
In a saucepan, add the grated bottle gourd and cook on low heat till soft with the moisture dried out. Cool and then combine with the potatoes along with the rest of the ingredients. Mix in only 1/4 cup breadcrumbs.
Refrigerate mixture for an hour and then shape into 16 croquettes.
Heat oil in a skillet.
Coat croquettes with reserved breadcrumbs and fry till golden brown on all sides. Drain on absorbent paper towels and serve with ketchup.

- Handle mixture gently.
- Refrigerating firms the mixture making it easier to shape.
- Croquettes can be prepared in advance, refrigerated and shallow fried just before serving.
