Cafreal masala is an aromatic, flavourful blend made up of spices, coriander leaves, green chillies, garlic and ginger. It is so versatile and besides chicken, it can be used on paneer, fish, prawns, in meatballs, meatloaf, cutlets and even with vegetables. The paste gets its colour and divine fragrance from the coriander leaves. I always have cafreal paste in the refrigerator which comes in handy for a quick fix meal.

Broiled Salmon With Cafreal Masala
(Serves 6)
Ingredients:
3.5 lbs or 1.5 kg fish steaks or fillets
1/4 cup olive oil
1 lemon
salt
Grind to a paste (with very little water if required)
2 cups coriander leaves
2 long green chillies
1 cinnamon stick (1.5")
6 cloves
8 peppercorns
1 teaspoon cumin seeds
4 large cloves of garlic
1/2" piece of ginger
1 teaspoon poppy seeds (khus khus)
1 tablespoon vinegar
1/4 teaspoon turmeric powder
Method:
Wash, pat dry fish pieces and season with salt.
Marinate with the ground paste for an hour.
Adjust the oven rack to the topmost position and set the oven to broiler mode at 500 F or 260 C.
Line a baking tray with aluminum foil and lightly grease with oil.
Add olive oil to the marinated fish and place on the prepared tray. Top each piece of fish with the cafreal paste leaving some aside to coat the other side during the cooking process.
Keep the tray under the broiler for 5 minutes. Remove tray from the oven, turn the fish pieces and coat the other side with the remaining paste. Broil for another 5 minutes till the fish is cooked through and paste slightly charred.
Serve fish steaks sprinkled with some lemon juice.
