Chicken Cutlets

Ingredients:
4 cups cooked chicken (shredded)
4 green onions (chopped)
2 long green chillies (chopped)
4 large cloves of garlic (grated)
1/2-inch piece of ginger (grated)
1/2 teaspoon turmeric powder
1/2 teaspoon pepper powder
2 teaspoons garam masala powder
1/2 cup shredded cheese
1 egg
1/4 cup breadcrumbs
juice of one lemon
handful coriander leaves (chopped)
1/2 cup semolina (rava)
oil for shallow frying
salt
Method:
In a food processor, pulse the cooked chicken to a coarse texture. (Do not grind to a paste.)
Transfer ground chicken into a bowl and mix in rest of the ingredients except for semolina and oil.
Place semolina in a flat dish and heat a non-stick skillet drizzled with some oil.
Make small round balls of the chicken mixture, flatten and coat with semolina. Shallow fry cutlets until light brown on both sides and heated through. Drain on absorbent paper towels.
Serve cutlets hot as an appetizer or side with the main meal.
