A popular snack available at various bakeries and eateries in Mumbai and Goa. Simple, easy to make at home and often served at various occasions (parties, social gatherings, litany or picnics just to name a few). Shredded chicken is dressed in a creamy mayonnaise mixture and encased in a bread roll with lettuce. The roll is wrapped in parchment paper to keep it fresh and prevent it from drying out. Delectable with the soft bread complimenting the moist flavourful filling and crisp lettuce. Perfect, economical, convenient on the go, loved and enjoyed by children and adults.

Chicken Roll
(Servings 6 or 12 depending on the size of the bread roll)
Ingredients:
480 grams (2 large) boneless chicken breasts
2 bay leaves
4 cloves
2 cinnamon sticks (1-inch each)
10 whole black peppercorns
1 heaped spoonful chopped garlic
2 teaspoons grated ginger
2 small green chillies (finely chopped)
freshly cracked black pepper
1/2 cup water
salt
Method:
Wash chicken breasts, season with salt (not too much), garlic, ginger, green chillies in a pan and set aside for 30 minutes.
Add rest of the spices (except salt) and water to the chicken breasts. Place on the stove and cook on medium heat turning occasionally until tender with water completely absorbed.
Discard the whole spices and shred the chicken breasts. Mix in the dressing given below.
Dressing
Ingredients:
1 cup Hellman’s mayonnaise
1/4 cup butter (softened)
6 spring onion only green stalks (very finely chopped)
freshly cracked black pepper
Method:
Mix all the ingredients together in a bowl.

Ingredients:
12 small rolls or 6 big rolls
crisp lettuce leaves
parchment paper
Method:
Stuff each roll with spoonfuls of the chicken filling along with lettuce leaves. Wrap roll in parchment paper to keep them fresh until ready to serve.

Note:
- No salt was used in the dressing, which was perfectly seasoned with the mayonnaise and butter. Hence, do not add too much salt to the chicken breasts at the start.

Note:
- If rolls are not already sliced then, do so before filling them. In Canada, the rolls are sliced and packaged for sale.
