A popular snack ideal for game day, movie night or a party. Whenever it's movie night at our home, I love to make chicken wings for the family. I bake or fry them. Today, the recipe is on deep-fried chicken wings. They are finger-licking good when eaten warm.
The wings are marinated with spice powders for a couple of hours. Dredged in flour, beaten egg, flour again and then deep-fried. The double flour coating creates an extra texture and crunch that is appealing to young and old. They make a great party snack and it takes only 8 minutes to deep-fry one wing. Serve them with your favourite dipping sauce and as my two sons would say, they are "amazing".

Crispy Fried Chicken Wings
(Serves 6)
Ingredients:
24 chicken wings
2 teaspoons chilli powder
1 tablespoon garlic powder
1 teaspoon pepper powder
1 teaspoon dried thyme
oil for deep frying
salt
Method:
Wash and pat dry chicken wings. Marinate with spice powders, thyme and salt for two hours.
Batter
2 teaspoons chilli powder
1 tablespoon garlic powder
1 teaspoon pepper powder
1 teaspoon dried thyme
2 eggs
2 cups white flour
salt
Method:
In a dish, season the flour with salt, spice powders and thyme.
Beat the eggs in a separate bowl.
Heat oil for deep frying.
Take each wing, toss in the flour first, then beaten eggs, back into the flour (basically double dipping in flour) and finally into hot oil.
Deep fry till chicken wings are cooked through, no longer pink at the bone, with the outside crust golden brown and crisp, around 8 minutes. Drain on absorbent paper towels.
Serve wings warm with sweet chilli dipping sauce or your favourite sauce.
Tip:
Use your fingers to coat the chicken wings with flour, then with a pair of tongs, dip them in beaten eggs and transfer them back into the flour. Now using your fingers, cover the wet wings with flour. The tongs will prevent your fingers from being caked up with the flour.
