Crispy Panko Fried Shrimps
(Yields 20)
Ingredients:
20 large shrimps
1/2 cup cornflour
2 tablespoons all-purpose flour
1/2 teaspoon pepper powder
1 teaspoon chilli powder
2 teaspoons garlic powder
1 egg (lightly beaten)
2 cups panko breadcrumbs
oil for deep frying
salt
Method:
Shell shrimps leaving the last segment along with the tail. Devein each shrimp and place on a cutting board, belly side up. With a sharp knife, make slight incisions at intervals along the length of the belly. Do not cut all the way through.
Flip the shrimp over and gently straighten by pressing down on the flesh from tip to tail. This will lengthen the shrimp and keep it straight for coating and frying.
Batter
In a bowl, add cornflour, all-purpose flour, the spice powders, egg and salt. Mix to form a smooth consistency. If the batter is too thick, add very little water.
Put the panko breadcrumbs in a bowl with a spoon.
Hold the tail of the shrimp, dip in the batter then into the bowl with panko breadcrumbs. Spoon crumbs onto the shrimps and place them in a plate. Follow the same procedure for the rest of the shrimps. Once all the shrimps are coated, they are ready to be deep fried.
On medium flame heat oil, when ready, fry shrimps until golden brown and crispy.
Serve hot with cocktail sauce.
Cocktail Sauce
Ingredients:
3/4 cup ketchup
2 teaspoons chilli sauce
2 teaspoons Worcestershire sauce
1/4 teaspoon Tabasco sauce
1 to 2 teaspoons lemon juice
Method: Mix the above cocktail ingredients. Stir and serve with fried shrimps
