A no cook, no bake, date and walnut log. Simple, quick and easy to make, with no added sugar or fat. For a festive touch, I have included pistachios, cranberries and rolled the log in desiccated coconut. The sweetness from the dates, slight tartness from the cranberries, nuttiness from the walnuts and pistachios with a hint of coconut makes it a delightful treat. Perfect for the holidays, fruity, nutty, healthy and nutritious.
The fruits and nuts can be chopped in a food processor or with a knife. Quantity and choice of nuts can be adjusted according to your personal preference and taste. Mixing and shaping of the log is done by hand. Refrigerated to set, sliced and eaten as an energy booster, snack or as an accompaniment with cheese or cracker.

Date & Walnut Log
(Yields about 600 grams)
Ingredients:
400 grams dried pitted dates
1/2 cup pistachios (shelled and unsalted)
1/2 cup walnuts (shelled)
1/4 cup dried cranberries
1 1/2 tablespoons desiccated coconut
Method:
Roughly chop dates and then pulse in a food processor to a coarse texture.
Chop nuts and cranberries with a knife, set aside.
Mix the dates, walnuts, 1/4 cup pistachios and 2 tablespoons cranberries together. Roll and form into a cylindrical log. Tap both ends on a board to flatten and continue rolling.
Spread reserved pistachios and cranberries on the board. Firmly press the log over the pistachios and cranberries until they are well incorporated into the log.
Roll the log over sprinkled desiccated coconut to coat. Tightly wrap in a cling film and refrigerate for a couple of hours to set.
Slice and serve as a snack.

Note:
- No fat or moisture required. The dates are sticky enough to hold the nuts and cranberries.
- Choice of nuts can be used.
- Quantity can be adjusted, as desired.
- To flavour, a dash of cardamom powder can be added.
- In case of shelled pistachios, blanch, remove skin, dry roast, chop and use.
- Wrap log in a cling film to prevent it from drying out. Refrigerate and slice when required.
