Roast beef is so versatile and can be utilized in preparing creative and delicious dishes in no time. One such dish is the beef chilli fry prepared with leftover roast beef. A great way to stretch the roast. Addition of vegetables to the roast increases the volume and transforms into a substantial meal.
The roast beef is carved into slices, cubed, cooked with onions, green chillies, tomatoes and green bell peppers to create a scrumptious beef chilli fry dish. Savoured with a chilled glass of beer or an alcoholic drink, it is a satisfying dish for a meat lover. It can also be served as a side dish with the main meal.
My husband has a weakness for beef and this is his favourite dish. The onions and bell peppers have to be crunchy, while the beef tender. This dish is reminiscent of the time we shared walking along the beach, taking a break and enjoying beef chilli fry with a chilled glass of beer at one of the shacks. Goan Beef Chilli Fry
(Serves 6)
Ingredients:
1/2 kg Goan Roast Beef
1/4 to 1/2 cup gravy (from Goan Roast Beef)
2 onions (sliced thick)
2 green chillies (slit)
1 tomato (sliced)
1 green bell pepper (capsicum)
1/2 teaspoon turmeric powder
1/2 teaspoon pepper powder (preferably from peppermill)
handful coriander leaves (chopped)
1 tablespoon vinegar
2 tablespoons oil
salt
Method:
Carve the roast beef into thick slices and then cut into cubes.
Heat oil in a skillet, fry the onions with green chillies and salt. When the onions have slight wilted, add the tomato and turmeric powder. Stir in beef along with the gravy and green bell pepper. Combine well and season with vinegar, pepper powder, salt (if needed). Cook on medium heat till all the vegetables are well flavoured and still crunchy. (Do not overcook the onions and green bell pepper). Garnish with coriander leaves.

Note:
- A couple of chopped boiled potatoes can also be added to the dish.
- For extra spice, add some more green chillies.
