Goan Poli
(Makes 8)
Ingredients:
Filling:
2 cups grated coconut
1 pyramid of Goa jaggery
1/4 teaspoon cardamom powder
Method:
I noticed that Goa jaggery is filled with impurities so in a saucepan on medium flame, I first melt the jaggery with 1/2 cup of water. Once the jaggery has been completely dissolved, strain the liquid through a cheesecloth. Clean the saucepan of any impurities and then, add the filtered liquid along with grated coconut. Place saucepan on a medium flame and stir at intervals till coconut mixture completely dry. Shut off flame and transfer mixture onto a plate. Add cardamom powder and allow mixture to cool.
Dough
Ingredients:
2 cups wheat flour
1 cup lukewarm water
1/2 teaspoon salt
Method:
Make a soft dough with the above ingredients. Cover and keep aside to rest for few minutes. Divide dough into 8 equal balls.
Preparation:
Roll each ball into a small circle. Add 2 tablespoons of filling in the centre of the circle. Gather the ends and seal. Press lightly with fingertips and spread filling. Roll gently to a circle and roast on a hot tawa with or without ghee.
Note:
The polis were roasted without any fat hence ghee (clarified butter) was not included in the list of ingredients.
