I like to be innovative and decided to add them with green beans. To enhance the dish, included some spices. A delicious and substantial combo, which can be served as a side. The crunch and sweetness from the green beans along with the smooth and mild taste of the jackfruit seeds, flavoured with the spices was definitely enjoyable.

Green Beans With Jackfruit Seeds
(Serves 6)
Ingredients:
350 grams green beans
1 cup jackfruit seeds
1 onion (sliced)
2 green chillies (slit)
1 tomato (chopped)
2 large cloves of garlic (chopped)
1/2 inch ginger (grated)
1/2 teaspoon turmeric powder
1/2 teaspoon chilli powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 sprig curry leaves
1/2 cup water + 1/4 cup water
2 tablespoons oil
salt
Method:
Trim off the ends and cut the green beans diagonally. Wash in a colander, drain and set aside.
Peel the outer white layer of the jackfruit seeds with a knife and cut each seed into four (lengthwise).
Heat oil in a pan, add curry leaves, once fragrant, sauté onion with garlic and ginger. When onion is translucent, stir in green chillies and tomato. Cook until tomato is soft, then include the jackfruit seeds with 1/2 cup water and salt. Cover and cook on medium heat till seeds are almost tender and water absorbed.
Now, mix in the spice powders, green beans and 1/4 cup water. Cover and cook until beans are tender-crisp. Check for seasoning and add salt, if required.
Serve warm with bread, roti or as a side dish.

Note:
- Instead of cumin powder, you can add 1/2 teaspoon cumin seeds with the curry leaves.
- Leaving the jackfruit seeds at room temperature for a couple of days dries the outer layer making it easier to peel.
