On a dinner date with my husband John at a Hakka Restaurant. His weakness is beef so we ordered Chilli Beef. Though the beef was tender, it tasted more like veal. Mild and delicate, we did not enjoy the meat. I told John I would replicate the dish at home. With beef tenderloin, I prepared my version with our garden bell peppers to complement the meat. It not only looked impressive, but was incredibly delicious and irresistible. John enjoyed it to the fullest and said, it was amazing.
This dish is quick and easy to prepare with the right cut of meat and Asian condiments from the pantry to enhance the taste. Beef tenderloin is versatile and flavourful. An expensive cut of meat, loved for its soft and succulent texture. It is a long, slender muscle that undergoes minimal activity hence, the meat is extremely tender and literally melts in the mouth. Slices of meat are marinated and shallow fried. Then tossed in a spicy sauce balanced with a touch of sourness. Served hot garnished with spring onion greens. Indo-Chinese Chilli Beef
(Serves 6)
Ingredients:
550 grams beef tenderloin
1 heaped spoonful of chopped garlic
1-inch ginger (grated)
1 tablespoon Chings green chilli sauce
1 tablespoon light soy sauce
1/4 cup cornstarch
1 egg
1/2 teaspoon pepper powder
1/4 cup oil for frying
Method:
Cut the beef tenderloin into thin slices. Wash, drain well and marinate with all the ingredients except the oil. Set aside for 30 minutes.
Heat oil in a wok or skillet and fry the slices in batches until tender. Set aside.
Sauce
Ingredients:
4 onions (cut into chunks)
6 cayenne peppers or long green chillies (chopped)
1 heaped spoonful of garlic
2 green bell peppers (cut into chunks)
2 tablespoons light soy sauce
2 tablespoons Chings green chilli sauce
2 tablespoons rice vinegar
2 tablespoons toasted sesame oil
freshly cracked black pepper
few spring onion greens for garnishing
salt (if required)
Method:
Add the sesame oil in a wok and on high heat, sauté the onion chunks with the green chillies for a minute or two. Stir in the garlic and when fragrant, add the soy sauce, chilli sauce along with the rice vinegar.
Toss in the fried beef slices, bell peppers and freshly cracked black pepper. Cook for a couple of minutes. Taste for seasonings and if needed, add salt.
Serve hot garnished with spring onion greens.
