Here is a simple recipe that is quick and easy. The ground meat is browned and cooked with spices, while simultaneously, a pot of boiling water for the pasta is kept on the adjacent burner. Tossed with the mince once the macaroni is cooked until “al dente” meaning cooked, but firm to the bite. Macaroni and Mince (Goan-Style)
(Serves 4 or 6)
Ingredients:
1 1/2 to 2 cups elbow macaroni
1/2 kg ground meat of choice
1/2 teaspoon turmeric powder
1 teaspoon chilli powder
1/2 teaspoon cumin powder
1/2 teaspoon clove powder
1 teaspoon cinnamon powder
1/2 teaspoon pepper powder
4 cloves of garlic (finely minced)
1/2 inch ginger (grated)
1 large onion (chopped)
2 green chillies (chopped)
1 large tomato (chopped)
1 tablespoon vinegar
2 tablespoons extra-virgin olive oil (if required)
few basil leaves
2 tablespoons Parmesan cheese (grated)
1/2 cup water
a pinch of sugar
salt
Method:
In a pan, bring water to a boil, add salt and cook macaroni until al-dente (firm to the bite). Drain out the water using a colander.
In a skillet, brown the ground meat. If meat is too lean, then add olive oil. Stir in the onion, green chillies, garlic and ginger. Once onion is soft, then mix in tomato and the spice powders. Add the 1/2 cup water, vinegar, sugar and salt. Cover and cook on medium heat until most of the moisture has evaporated. Toss the cooked macaroni with the mince.
Serve hot with grated parmesan cheese and torn basil leaves.
