Sandwiches are popular worldwide, but none to beat the ones from Mumbai's roadside vendors. The creativity and innovative way that they are prepared by the skillful hands is mind blowing and astonishing. While you wait for your sandwich to be prepared, one is just mesmerized at the vendor's hands at work. He slathers two bread slices with butter and dark green chutney. Then, with a very thin long serrated knife neatly saws through each vegetable with speed and precision. Once the bread slices are stuffed, grilled if preferred and sliced into pieces. Served drizzled with ketchup and one of my favourite lunch time food when I worked at Tata Steel (TISCO), Fort, Mumbai. Though the regular sandwich with assortments of vegetables is a real delight, addition of potato masala takes it to a different level. Crunch from the vegetables, spicy chutney along with the goodness of potato filling and sweet ketchup soothing the palate, this sandwich is definitely filling and satisfying.
Handheld stove-top sandwich toasters made with lightweight aluminum were very common in the 70s and 80s. Replaced with a non-stick surface, currently taken over by electric sandwich makers and panini presses. A sandwich maker is indeed a handy appliance. Reasonably priced with its compact design and cord winding feature. Fits vertically thus, saving on space. The non-stick coating eliminates the need for excess fat, easy to use and clean. Masala Cheese Toast Sandwich
(Serves 4 or 8)
Potato Masala
Ingredients:
2 large potatoes (boiled)
1/2 teaspoon mustard seeds
1 sprig of curry leaves (chopped)
2 green chillies (chopped)
1/4 teaspoon turmeric powder
1/2 teaspoon garam masala powder
a dash of lemon juice
handful coriander leaves (chopped)
2 tablespoons oil
salt
Method:
Pass the two warm two potatoes through a ricer. Set aside.
Heat oil, add mustard seeds, curry leaves, green chillies and turmeric powder. Mix in the potatoes, a dash of lemon juice, garam masala powder and salt.
Garnish with some chopped coriander leaves.

Sandwich
Ingredients:
16 sandwich bread slices
2 large tomatoes (sliced crosswise)
2 large onions (sliced crosswise)
1 cup shredded cheese
chaat masala (optional)
pepper powder
slices of raw beetroots and green bell pepper (optional)
butter (softened)
salt
Method:
Heat an electric sandwich toaster. Lightly grease with butter.
On a cutting board, place two slices of bread. Spread some butter, then green chutney on both. On one slice, top with potato masala, then tomato slices, followed by onion slices. Sprinkle some pepper powder, chaat masala, salt and finally, with shredded cheese. Cover with the second slice of bread with the chutney side facing down. Press gently and place the sandwich in the toaster. Close cover, lock and cook until brown and crisp.
With a silicone spatula, remove the toasted sandwich. Place on a cutting board and cut diagonally. Serve hot with some tomato ketchup.
Repeat the above with the remaining bread slices and ingredients.
If desired, beetroot and green bell pepper (capsicum) slices can also be included before topping with cheese.
