Spice your breakfast with this masala egg toast. If you have a day old or stale bread, it's ideal to make this masala egg toast. If the vegetables do not adhere to the bread slice, spoon them onto the slice. Then slowly place the slice into the frying pan. You can add some spice powders, cheese or herbs, depending on your personal preference.

Masala Egg Toast
Ingredients:
2 Bread Slices (a day old, cut into triangles)
2 eggs beaten with 1 tablespoon milk
2 spicy green chillies (finely chopped)
1 tomato (finely chopped)
1 onion (finely chopped)
few coriander leaves (finely chopped)
1/4 teaspoon pepper powder
Oil for shallow frying

Method:
To the egg mixture, add all the vegetables, salt and pepper powder.
Heat a non stick pan with little oil. Dip a slice of bread in the egg mixture and shallow fry till cooked. Flip and cook the other side.
On high heat, saute some mushrooms with a dab of butter, salt and pepper for 4 to 5 mins.
Serve masala egg toast with mushrooms and ketchup.
