This specialty from Hyderabad is so amazing, by far my favourite with fresh methi. Wondering if it is my cooking or the baby fenugreek (methi) grown without soil (second batch, picture below) by my husband. Baby fenugreek can be replaced with big methi leaves or kasoori methi (dried fenugreek leaves). The bitter vegetable complements the chicken with its distinct flavour enhancing the dish. Cooked with spices in an onion-tomato based sauce with the addition of yogurt, methi chicken is creamy, delicious and finger-licking good. Best devoured and mopped up with naan.
The onions are caramelized, ground to a paste with green chillies, garlic, ginger and tomatoes. I have used store bought fried onions as a quick substitute and to save on time. Once the ground paste is fried well in oil, spices, boneless chicken pieces and fenugreek (methi) are combined and cooked. Yogurt and garam masala powder are mixed in, at the end. An easy dish to prepare, yet extremely tasty.

Methi Chicken
(Serves 6)
Ingredients:
1 kg boneless skinless chicken thighs
6 cups of baby fenugreek (methi)
1/2 teaspoon turmeric powder
1/2 teaspoon chilli powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 cup yogurt or sour cream
1 tablespoon garam masala powder
few coriander leaves (for garnishing)
2 tablespoons of oil
salt
Grind to a paste (with a dash of water not much)
1 cup store bought fried onions
2 to 4 long green chillies
4 large cloves of garlic
1” piece of ginger
1 large tomato
Method:
Chop baby fenugreek, place in a colander, wash and drain well.
Note:
Cut chicken thighs into pieces, wash, drain well and season with salt.
Heat oil in a pan and fry the ground paste for few minutes. When oil starts to separate, add the turmeric powder, chilli powder, cumin powder and coriander powder. Stir in the chicken and mix well followed by the methi. Cook on low heat with no water.
When chicken is half cooked, add the yogurt or sour cream. Season with salt and when chicken is cooked through, sprinkle garam masala powder. The oil will float on the top when done.
Serve garnished with coriander leaves and hot naan.

Note:
- Methi was grown without soil so the entire root including the stalk and leaves were used.
- The quantity of baby fenugreek can be reduced as desired.
- Substitute baby fenugreek with 1 to 2 cups of big methi leaves or 1 to 2 tablespoons of kasoori/kasuri methi (dried fenugreek leaves).

- Store bought fried onions can be substituted with one large onion. Slice and caramelize the onion in 2 tablespoons of oil before grinding.
- I had the 9 grains triangle ciabata buns from Costco so served them with methi chicken.
