Breakfast is the most important meal of the day and my mother always ensured that we were well-fed before we went to school. She elevated the humble egg with the addition of ground meat. Hearty and delicious, we devoured this omelette with either bread or chapatis. Now my boys love it too especially since eggs are combined with meat. Rich in proteins and iron, extremely nutritious.
Eggs are cheap, easy to cook, versatile and taste better when enriched with other fresh ingredients. This omelette is cooked on the stove top and finished in the oven. The eggs set and cooks perfectly within minutes without the hassle of flipping or fear that the omelette will fall apart. Besides breakfast, it can be served for lunch or dinner. The omelette can be flavoured with spices, as desired. When served for breakfast, I prefer to use minimal spices. Ground beef can be substituted with chicken or lamb. A quick dish to prepare with the eggs and meat cooking in no time.

Mince Omelette
(Serves 2 or 4)
Ingredients:
6 large eggs
1 onion (chopped)
2 long green chillies (finely chopped)
1 tomato (chopped)
2 large cloves of garlic (grated)
1/2-inch ginger (grated)
2 cups ground meat (of choice)
few coriander leaves (chopped)
1/8 + 1/8 teaspoons pepper powder
3 tablespoons oil or butter
salt
Method:
Preheat oven at 400 F or 200 C.
On medium flame, heat an oven proof 10 1/2-inch non-stick or ceramic skillet with oil. Saute chopped onion, garlic, ginger, green chillies, tomato with very little salt for a minute or two. Then, add ground meat, 1/8 teaspoon pepper powder and cook until grainy. Let all the moisture dry out before pouring the eggs lightly beaten with the balance 1/8 teaspoon pepper powder and salt. Sprinkle the coriander leaves on top.
Stir gently to release egg mixture from the side. Keep only for a couple of minutes on the stove.
Transfer the skillet in the preheated oven for 5 minutes until eggs are cooked.
Serve omelette with bread or chapatis.

- Shredded cheese can also be sprinkled on top before placing the skillet in the oven.
