A popular dish available at local restaurants and tea stalls throughout Goa, one that is commonly eaten for breakfast. Patoll (patal) bhaji is prepared with dried white or green peas that are hydrated, boiled and cooked in a spicy watery gravy with potatoes. Relished with pao (bread) or puris and often accompanied with sukhi bhaji (potato bhaji). When patal and sukhi bhaji are served side by side together in a plate, it is known as mixed bhaji.
The array of spices for the gravy are roasted before grinding into a paste lending a unique aroma and flavour that makes patal bhaji truly irresistible and finger-licking good. Mixed Bhaji - Patoll (Patal) & Sukhi (Potato) Bhaji
(Serves 8)
Patoll (Patal) Gravy
Ingredients:
1 cup fresh or frozen grated coconut
1 large onion (sliced)
1 tablespoon coriander seeds
1 teaspoon cumin seeds
1 teaspoon fennel seeds
4 cloves
1.5" cinnamon stick
8 peppercorns
4 large cloves of garlic
1/2" ginger
a small piece of nutmeg
4 petals of star anise
5 red dried Kashmiri chillies
1/4 teaspoon turmeric powder
2 tablespoons oil
Method:
Heat oil in a skillet and roast the onion till translucent. Then add coconut with the onion and continue to roast till both are light brown.
Dry roast rest of the ingredients except the turmeric powder.
Grind all roasted ingredients, turmeric powder with some water to a fine paste.
Patoll (Patal) Bhaji
Ingredients:
2 cups dried green or white peas
1 large onion (chopped)
2 potatoes (peeled and cut into small cubes)
1 cup tamarind water
a pinch of jaggery or sugar
handful coriander leaves (chopped)
2 tablespoons oil
salt
Method:
Soak dried peas overnight in water, drain and cook with 6 cups of fresh water. Bring to a boil, reduce to a simmer, cover and cook with salt till soft. Skim off the foam that rises to the top. It will take around 40 to 45 minutes for the peas to be tender. (I don't pressure the peas as they turn to a mush very quickly.)
Heat oil in a pan and sauté the onion till translucent. Then fry the ground paste for few minutes. Add the boiled peas along with the remaining cooked water, tamarind water, potatoes and a cup of water. Simmer and cook till potatoes are tender. Adjust seasoning by adding jaggery or sugar and salt. If gravy consistency is thick, add some water. Garnish with coriander leaves.
Sukhi (Potato) Bhaji
Ingredients:
6 potatoes (boiled and cut into cubes)
2 large onions (sliced)
2 long green chillies (chopped)
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
2 sprigs of curry leaves
handful coriander leaves (chopped)
juice of half a lemon
2 tablespoons oil
salt
Method:
Heat oil in a pan and add mustard seeds along with curry leaves. When the mustard seeds start to splutter, then fry the onions with some salt till soft. (I usually cover the pan and cook the onions on low heat). Stir in the turmeric powder, green chillies, boiled potatoes, lemon juice and salt (if needed). Cook on low heat till well combined. Garnish with coriander leaves.
(If desired, add some water for a runny consistency.)
Serve patoll and sukhi bhaji with pao (bread) or puris.
