This savoury Mexican starter of tortilla chips with toppings of salsa and melted cheese is now popular globally. Perfect for game nights, while watching a movie or casual get-togethers. With the addition of beef mince, these nachos are definitely hearty and irresistible.
Assembling this appetizer is easy once the seasoned beef is cooked. The packaged tortilla chips are arranged in a baking dish or pan, topped with salsa, then seasoned beef, finally finished with a sprinkle of shredded cheese. Baked in a preheated oven for the cheese to melt, which takes less than 5 minutes and served immediately. Sour cream, sliced pickled jalapenos peppers and guacamole are additional toppings that go well with nachos or can be served on the side.
Beef mince can be replaced with ground chicken. Do not top the nachos with too much salsa as the tortilla chips tend to get soggy. Extra salsa can always be served on the side. A cold beer goes well with the spicy, beefy and cheesy nachos.

Nachos with Seasoned Beef
(Serves 8)
Beef
Ingredients:
1/2 kg beef mince
1 onion (chopped)
4 large garlic cloves
2 tablespoons tomato puree
1 teaspoon chilli powder
1 teaspoon cumin powder
1 1/2 teaspoons dried oregano
1/2 teaspoon pepper powder
1/2 cup water
2 tablespoons oil
salt
Method:
On medium flame, heat a skillet and fry the mince till it changes colour.
Heat oil in a pan and sauté onion till soft. Add garlic and cook for a couple of minutes. Stir in chilli powder, cumin powder, dried oregano, pepper powder along with tomato puree. Once the spices are cooked, add the mince (discarding the fat from the skillet), water and salt. Let the mince cook thoroughly with all the moisture absorbed and mixture completely dry. Set aside.
Nachos
Ingredients:
300 grams Tostitos corn tortilla chips (Restaurant Style) or desired chips
1 cup Tostitos mild or hot salsa
1 cup shredded double cheddar cheese
Assembling:
Preheat oven to 400 F or 200 C.
In an oven safe pan or baking dish, arrange the tortilla chips in a single layer. Top the chips with salsa, then cooked beef mince and shredded cheese. (Do not add too much salsa or else the chips will get soggy.)
Place the pan in the oven for the cheese to melt, less than 5 minutes.
Serve topped with some sliced pickled jalapenos peppers, sour cream and guacamole on the side.

Note:
- Depending on the size of the pan, layer chips in a single row so that each one has some toppings.
- I have used a 16" pizza pan utilizing 300 grams of chips at once.
- For the 9 " x 9" pan, I used few chips but utilized another baking dish for the rest.
- The prepared seasoned beef is enough for 300 grams of chips.
- To make quick salsa at home ... pulse 1 onion, 1 tomato, 1 jalapeno or a long green chilli and few coriander leaves in a processor. Add a dash of lime juice, salt and a tiny pinch of sugar to balance sourness.
