Orange Jubilee Cake
(Serves 10)
Cake
Ingredients:
1 cup butter or margarine (softened)
1 cup sugar
4 large eggs
1 tablespoon orange zest
1 teaspoon baking powder
1/3 cup orange juice
1/2 cup buttermilk
2 cups all purpose flour or maida
Glaze:
1/4 cup jam (orange marmalade or as desired)
Method:
Preheat oven to 350 F or 150 C.
Grease and dust the cake pan with flour.
Sift dry ingredients; flour and baking powder. Set aside.
In a stand mixer or with an electric beater, beat butter till fluffy. Add sugar and continue to beat till creamy. Combine the eggs one at a time and then stir in the dry ingredients, orange zest, alternating with buttermilk and orange juice.
Using a spatula, give a good mix and then transfer batter into the cake pan. Bake for 40 minutes or until a toothpick inserted in the centre comes out clean. Cool cake for 10 minutes and then invert onto a dish.
Heat the jam for 15 seconds in the microwave. Brush over the cake and let it sit for 10 minutes before serving.
Decorate with blanched almonds.
