Today, it is raining in Toronto and nothing is more soothing and comforting than a warm bowl of paya soup. Nostalgic and reminiscent of my late mother who would coax us to have some when we were sick or down with cold. Prepared with trotter and hoof or foot of goat or lamb. Trotter is the lower part of the leg below the front knee and hind hock whereas hoof consists of the toe, heel and sole. Request the butcher to clean them well. Fortunately in Toronto, they are snowy white, spotless, packaged and ready to be cooked. Paya soup is absolutely delicious, nutritious with many health benefits. Often recommended to ailing patients.
The trotters are cleaned and washed well ensuring to get rid of any dirt and hair. Dusted with wheat flour and rubbed with salt before rinsing. Then, cooked on low heat for a couple of hours, flavoured with various spices. Nowadays, expedited by pressure cooking. Paya Soup
(Serves 4 or 6)
Ingredients:
3 goat or lamb trotters (about 600 grams)
8 cups of water (2 litres)
1-inch ginger (peeled and sliced)
2 bay leaves
15 whole black peppercorns
1 cinnamon sticks (2.5-inch)
1 tablespoon coriander seeds
1/2 teaspoon turmeric powder
2 bouillon cubes
1 onion (chopped)
1 tomato (chopped)
freshly cracked black pepper
salt
Method:
Thoroughly clean the trotters getting rid of any dirt or hair. When dry, dust with some wheat flour and rub with salt. Rinse under running water and drain well.
Transfer to an instant pot or pressure cooker with water, bay leaves, ginger, peppercorns, cinnamon stick, coriander seeds and turmeric powder. Cook for 30 minutes until meat starts to separate from the bone.
Strain broth using a sieve into a pan and reserve trotters. To the broth, add bouillon cubes, onion and tomato. Simmer until vegetables are soft, then include the trotters, freshly cracked black pepper and salt.
Serve hot.
