Give a Goan some Xit Kodi (rice and fish curry), he or she will be on cloud nine. A Goan meal is incomplete without fish, cooked either in a curry, fried or pickled. Goa is famous for its beaches and abundant seafood, no wonder Goans love to gorge on fish. Fried fish is usually coated with rava or semolina and shallow fried for a crispy exterior.
The fish fried is golden pompano. A tasty, meaty fish with a flavour similar to pomfret. The skin is tough, slightly leathery but once cooked, it is tender. This fish has a moderate fat content which contributes to a succulent oily bite. If you haven’t tasted pompano, please do. It is delicious and readily available in Canadian supermarkets. Pompano is a good source of protein, thiamine, selenium, Vitamin B12 and phosphorus.

Peixe Frito (Fried Fish)
(Serves 4)
Ingredients:
1 large fish (around 1 kg)
2 tablespoons red chilly powder
1 teaspoon turmeric powder
1 teaspoon pepper powder
2 teaspoons cumin powder
1 tablespoon vinegar
1/2 cup rava or semolina
oil for shallow frying
salt
Method:
Clean fish, cut gashes on both sides, wash and season with salt.
Make a paste with the spice powders and vinegar. Rub the fish all over with the paste and leave it to marinate for 30 minutes.
On medium flame, heat a skillet with some oil. Coat fish with rava and shallow fry on both sides till cooked. Enjoy fried fish with Xit Kodi and a serving of vegetable.

- Lemon juice or tamarind pulp can be substituted for vinegar.
