This recipe is from my late father and it holds a special place in my heart. My father was a gem, the kindest man I have ever known and an angel sent from above. He was a sailor and whenever he was home on vacation, I loved spending quality time with him. My uncle (dad’s brother) for his daughter’s christening wanted to serve fried pomfrets to the guests. He needed help in preparing and frying the fish. My father offered to assist his brother. We had to clean, marinate and fry around 100 medium sized pomfrets in a very small kitchen. I assisted dad and till today, remember spending time with him in the kitchen while he whispered the recipe to me. The pomfret is a delicate, flavourful fish and to enjoy its freshness, it is not heavily spiced. Whenever I prepare and enjoy this fried fish, I think it is a slice from heaven.

Pomfret Fish Fry (Peixe Frito)
(Serves 6)
Ingredients:
2 medium sized silver pomfrets
1.5 teaspoons turmeric powder
1 teaspoon pepper powder
juice of 1/2 a lemon
6 tablespoons of oil
1 cup semolina or rava
salt
Method:
Clean and cut each fish crosswise into 1/2” slices, around 6 pieces each, 12 in total.
Wash, dry fish well with absorbent paper towels.
Marinate fish with the spice powders, lemon juice and salt for 30 minutes.
On medium flame, heat a skillet with 3 tablespoons of oil. Coat fish with semolina and fry till exterior is crisp. Turn and fry the other side till fish is cooked.
Fry in two batches with 6 pieces at a time. Drain on absorbent paper towels.
Serve fish with lemon wedges.
