The famous Goan traditional curry prepared with coconut, spices and prawns. A delicious curry balanced with the sweetness of the coconut, heat from the spices and sourness from the tamarind. Prawns add depth of flavour and makes the gravy truly lip-smacking. Served over rice with a vegetable side dish sums up for a perfect Goan meal.

Prawn Curry (Caril De Camarão)
(Serves 8)
Ingredients:
2 cups prawns
1 cup tamarind water
2 cups water
2 long green chillies (slit)
6 thin strips of green bell pepper (capsicum)
half a bouillon cube
salt
Grind to a paste (with water)
1 cup grated coconut
8 to 10 Kashmiri dried red chillies
1 1/2 tablespoons coriander seeds
1 teaspoon cumin seeds
4 large cloves of garlic
1/2 teaspoon turmeric powder
Method:
Shell, devein prawns, wash and season with salt.
Strain the ground paste through a large sieve in a pan. Add tamarind water along with water (indicated in list of ingredients) to get the right consistency of the gravy.
Place the pan on medium heat and let gravy come to a boil. Then add the green chillies, strips of bell pepper, prawns, bouillon and salt. Simmer for a couple of minutes and shut off the flame. Do not overcook the prawns. Serve curry with rice and a vegetable side dish.

Note:
- Bell pepper imparts a unique aroma.
- Add some curry leaves to enhance the flavour.
- Instead of tamarind water, use slices of raw mango without the skin, dried mango, kokum or bimblis and adjust gravy consistency accordingly with plain water. If using raw mango slices, salt them before adding to the gravy.
- Substitute prawns with other seafood.
- Unlike grinding stones, blenders do not grind to a very fine paste. Hence, prefer to strain the paste for a smooth gravy.
