It is said that Kashmir is home to over 113 varieties of apples. Fascinated with this juicy delicious fruit, I always wanted to visit this beautiful place for our honeymoon. Due to the constant turmoil in this region in the late 1980s, we dropped the idea of visiting Kashmir. Fast forward a few years later, we settled in Canada and had our very own apple tree in our backyard. A combo tree that would bear five varieties of apples. Every Fall, when we are blessed with a bounty of apples from our own tree, I try to challenge myself in creating something unique and memorable with this fresh fruit.
Apple crisp is an extremely easy, affordable, comforting and no-fuss baked dessert. It consists of a layer of apples scented with cinnamon and topped with a crumbly mixture. Though old-fashioned rolled oats are commonly used in the topping, I have substituted it with slivered almonds. Firm apples from our garden were perfectly cooked and delightful with the textural bite of the almonds. We enjoyed the apple crisp to the fullest. This dessert can be served warm with either whipped cream or ice cream.

Quick & Easy Delicious Apple Crisp
(Serves 6)
Ingredients:
1 kg firm ripe apples
1/4 cup white granulated sugar
1 teaspoon cinnamon powder
2 tablespoons lime juice
2 teaspoons cornstarch
Topping
3/4 cup all-purpose flour
1/2 cup unsalted butter (cold and cubed)
1/4 cup light brown sugar
3/4 cup slivered almonds
1/4 teaspoon salt
Method:
Preheat the oven to 375 F or 180 C.
Wash, peel apples and cut into cubes. Transfer into a bowl and mix in the rest of the ingredients.
In a 9-inch x 7.5-inch x 3-inch oven-proof glass baking dish, spread the above mixture. Set aside.
Mix flour, sugar, salt and butter in a bowl. Cut the butter into the flour with a pastry blender until the mixture is crumbly.
Incorporate the slivered almonds. Sprinkle this mixture over the apples.
Place the baking dish in the oven. Bake for 45 minutes until golden and bubbling. The apples should be just tender when pierced with a knife.
Serve warm with either whipped cream or ice cream.
