Pork is a popular meat, incredibly versatile and adaptable to any recipe. Nutritious, delicious, easy to prepare and economical. This is one of our family's favourite dish. It's mouthwatering with a kick of spice and all you need is a fork to enjoy. Served as a starter with a glass of cold beer or side dish with the main meal. A dish oozing with flavour, making you salivate for more.

The latter consisting of oleic acid, a heart healthy essential fatty acid found in olive oil, associated with decreasing LDLs, thus lowering bad cholesterol. Eating pork in moderation as part of a balanced diet is key. Rich in protein, many vitamins and minerals. Effective for the growth and maintenance of muscles. Good for skin, eyes, bones, nervous system and mental health. Presence of essential antioxidants ensures better immunity to the body.

Quick & Easy Delicious Goan Pork Fry
(Serves 6)
Ingredients:
1 kg 250 grams boneless pork
2 large onions (cut into chunks)
4 green chillies (slit)
1 teaspoon turmeric powder
3 tablespoons vinegar
few coriander leaves (chopped)
2 tablespoons oil
salt
Grind to a paste with a very little water
4 long green chillies
6 large cloves of garlic
1 1/2-inches ginger
Dry roast and grind to a fine powder
2 cinnamon sticks (2.5-inches each)
6 cloves
4 green cardamoms
40 whole black peppercorns
1 tablespoon coriander seeds
1 teaspoon cumin seeds
Method:
Cut pork into cubes, wash and drain well. Season with salt and the marinated ground wet paste. Set aside for 30 minutes or if longer, refrigerate.
Transfer marinated pork pieces in a wok or skillet. Cover and cook on medium heat until three-fourth done. Sprinkle turmeric powder, ground spice powder and vinegar. Stir and mix in the onions with the green chillies. If pork used is too lean, add oil otherwise, leave it out. Check for seasonings and add salt.
Once onions have softened slightly until tender-crisp, take off heat.
Serve garnished with coriander leaves.

- To enhance flavour, add a dash of bouillon cube.
