I look forward to every festival to challenge myself in making various dishes and sweets. Diwali is one such celebration, a festival of lights. Our Hindu neighbours in Mumbai would send us a platter of various sweets that they made at home. We used to relish them and my favourite one was the mouthwatering rava ladoo. A traditional Indian sweet prepared during Diwali and other festivals.
These round ladoos are made with rava (semolina), coconut, sugar, cashewnuts, cardamom powder and ghee. Most of the ingredients are lightly roasted, ground to a powder and then shaped into a round ball with the addition of warm ghee. I prefer not to add any warm milk for a longer shelf life and firmer ladoos. The ghee provides the moistness to mould them, while they firm up with the icing sugar, retaining their shape, incredibly delicious and tempting. A simple and easy sweet that can be prepared within an hour.
Rava or semolina has a low glycemic index, keeps you full for a longer period of time and helps in maintaining body weight. An excellent source of iron and prevents anemia. Good for the heart, bones and nervous system. It is high in protein, low in fat and cholesterol. A power grain packed with amazing health benefits.

Rava Ladoo
(Makes 16)

2 cups rava (semolina)
1/2 cup desiccated coconut
1 cup icing sugar
1/2 cup cashewnuts (finely chopped)
1/4 teaspoon cardamom powder
1/3 cup ghee
few nuts or raisins for garnishing
Method:
Lightly dry roast coconut and rava, each ingredient separately. In batches, grind roasted ingredients together into a powder. Place in a bowl, mix in the sugar, cashewnuts and cardamom powder.
Melt the ghee in the microwave and when warm, combine with the ingredients in the bowl.
Lightly grease your palms and take a handful of the mixture, shape into a ladoo. At first, the outer edge will look rough. Keep rolling in your palms and it will smoothen out. Continue moulding with the remaining mixture.
Garnish with a nut or raisin on the top. (I have used slivered almonds to decorate.)
When ladoos are cooled, store in an airtight container.
