Yesterday evening, John picked some fresh zucchinis from our garden. This morning, I decided to make something different and the thought of breakfast, reminded me of pancakes. Hence, these savoury ones with a touch of spice and cheese. Prepared with yellow zucchinis that imparted its own beautiful colour to the pancakes. Simple, quick, delicious and satisfying. Savoury Zucchini Pancakes
(Yields 8)
Ingredients:
2 zucchinis (about 400 grams)
2 green onions (chopped)
2 green chillies (choppped)
2 large eggs
1/2 cup all-purpose flour
1/4 cup shredded cheese
1/2-inch ginger (grated)
freshly cracked black pepper
oil for greasing pan
salt
Method:
Scrub each zucchini under running water until the skin feels clean. Cut off the ends and grate using a box grater.
Note:
1. No need to squeeze out the liquid from the zucchini.
Transfer grated zucchini into a bowl. Add rest of the ingredients except oil.
Heat a skillet on medium flame. Lightly oil with a silicone brush.
Pour 1/3 cup batter, flattening each pancake gently. Cook four at a time until lightly brown on both sides, around 3 minutes per side.
Serve hot garnished with some onion greens.
