A comforting, creamy baked dish prepared with sliced potatoes. Simple and easy to prepare, loved by all. This side dish is served for Thanksgiving, Christmas, Easter, family gatherings or special occasions. It goes well with roasted chicken, turkey or meat.
I usually prepare this dish with Yukon gold potatoes available in Canada. They are slightly yellow, buttery and utterly delicious. Today, I substituted with red potatoes and they were equally tasty too. You can add caramelized onions, garlic and cheese but I like to keep it simple as the dish is already rich with cream and a dab of butter.
There is no need to precook the potato slices. The raw slices are layered in a baking dish and cooked with cream in an oven. An ideal simple vegetable dish to prepare especially when you are running out of time and have other dishes to cook for a party.

Scalloped Potatoes
(Serves 6)
Ingredients:
6 medium-sized potatoes
1 cup cream
1 tablespoon of butter
1/2 teaspoon pepper powder
salt
Method:
Preheat oven to 350 F or 180 C.
Peel, wash and slice potatoes to 1/8" with a knife. Season them with pepper powder and salt.
In a casserole or baking dish (1.5 quart or 1.4 litres), layer slices in rows and add the cream. Cover with aluminium foil and let potatoes cook in the oven for an hour.
After an hour, remove the baking dish from the oven. If you see some slices sticking upwards that look dry, just turn them over. Dot with butter at various spots on top. Bake uncovered for another 30 minutes till brown, potatoes tender and cream absorbed. Even if there is little cream left, do not worry. When you let it rest, the potatoes will absorb the cream. Remove the baking dish from the oven and let stand for few minutes. Serve as a side dish with roasted chicken, turkey or meat.
